• ORANGE JULIUS

     

    1/4c. frozen orange juice concentrate

    1/3c. water

    1/3c. milk

    2T. sugar

    1/2t. vanilla

    4 ice cubes

     

    1. Combine all ingredients in blender.
    2. Pulse a few times, then blend 30 seconds
  •                                                                                        Salsa

    Traditional Salsa

    8oz canned tomatoes or 3 whole peeled tomatoes

    1 jalapeno pepper

    1 clove of garlic

    Cilantro to taste

    2 chopped green onion

    ½ t salt

    Coarsely chop all ingredients

    Pulse in the blender until desired consistency (30 seconds – 1 minute)

     

    Corn salsa

    1 12oz can corn

    1 12oz can black beans

    ½ red onion chopped

    ¼ cilantro chopped

    ½ red bell pepper chopped/ seeded

    1/4c Italian dressing

    Drain corn and black beans. Place in a bowl. Add other ingredients and stir in dressing

     

    Green chili salsa

    8 medium tomatillos

    6 Serrano peppers

    1 avocado

    1 clove of garlic

    1/4 t salt

     

    Boil tomatillos and peppers for 3 minutes (SAVE WATER)

    place in all ingredients in a blender

    blend briefly until desired consistency

    add reserve water as needed

     

     

    Quesadilla

    Grate cheese

    Heat the griddle

    Put small amount of butter in pan

    Cover one tortilla with grated cheese and top with a second tortilla

    Cook a few minutes on each side, cheese should be melted

    Use pizza cutter to cut into slices

    Enjoy with your salsa
